    Gewürztraminer Grappa - Grappa gets a bad rap in the US thanks to the really rough ones served in too many Italian restaurants. But when we tasted Ransom's, we were blown away. Made from Gewürztraminer grape seeds, skins, pulp and stems (everything that's left over after the wine has been made), this crystal-clear spirit is smooth and fragrant with some of the distinctive tropical and spice notes that make Gewürztraminer wine so delicious. And there's no residual sugar, which makes this a great bracing spirit to sip after a big dinner. tip of the tongue Try splashing a little Grappa into your after-dinner coffee for a great twist on an old tradition. did you know? When liquor is distilled, the alcohol comes out of the still in phases, which are traditionally referred to as the heads, the hearts and the tails. Distillers typically keep the hearts to age or bottle, and rework or discard the heads and the tails.     Dark Chocolate Covered Nut Clusters - This very good mix of crunchy, chocolate-covered almonds and pumpkin seeds is one of the tastiest cacao-drenched snacks to come across our tasting table in a while. With just enough brown sugar and sea salt to satisfy our sweet-savory cravings, we all kept going back for just one more handful. It started out as a gluten-gree variation on chocolate-studded granola, but by the time Valerie Gordon of Valerie Confections was done, it had firmly crossed over from sort-of-cereal to incredible snack. She teamed up with the super-cool folks at Commune Design studio to produce this beautiful bag, as well as their Giant Fruit and Nut Dark Milk Chocolate Bar . tip of the tongue Pack a bag for a good (nay, great!) movie-watching munch at the theater.     Defiant Rye - This rich and peppery whiskey is super easy to drink, with just the right touch of malt sweetness. And while some ryes can be really firey and aggressive, Defiant Rye is exceptionally smooth. It’s made from 65% rye and 35% malted barley (hence the malt sweetness), all sourced from farmers near New York's Catskills. Rye whiskey was once used by Pennsylvania farmers as a substitute for money, which ultimately led to the Whiskey Rebellion when the federal government attempted to tax it. Even though they didn't win, we still admire their fighting spirit with every sip of this defiant rye. tip of the tongue Revolutionize your after dinner routine.     Don Rafael Cacao Rum - Choco-holics rejoice! This is chocolate rum, and chocolate rum at its finest. First, Cacao Prieto distills the rum from a mix of organic cane sugar and organic, single-origin cacao sourced from a family farm in the Dominican Republic. Then, they infuse it with even more roasted cacao before aging for a year in oak barrels. This isn't a liqueur, because no sugar is added after distilling. It's an earthy, rich, chocolate spirit with hints of vanilla and oak from the barrel; and a small pour has become one of our very favorite desserts. tip of the tongue Make grown-up ice cream sodas at your next dinner party. Fill tumblers with a scoop of chocolate or walnut ice cream. Add a shot of Cacao Rum and a shot of Nocino walnut liqueur, then fill the glass with seltzer. Serve with spoons and straws.

    McCarthy's Oregon Single Malt Whiskey - If Portland were in Scotland (dream big, people), this whiskey would be a single malt Scotch, and would certainly turn some heads. This rich, smoky, smooth spirit is a Single Malt Whiskey made in the smoky Islay Scotch tradition. To pull off this trick, Clear Creek brings in peat smoke-dried, malted barley from Scotland, and local brewery Widmer Brothers ferments it until it’s ready to distill. Then, they age it in a combination of used sherry casks and new local oak casks. This whiskey isn't just defined by the peat, though. The smoke is balanced by the creamy flavor of malted barley, and a hint of caramel sweetness from three years in new Oregon oak. This bottle has won just about every award and accolade out there.     Orange Pistachio Shortbread Cookies - Lomaxine cookies are seriously THE best cookie (except for all the other cookies we sell, of course). When these gorgeous bags of deliciousness arrived at our office, we sat for a long time, tasting and swooning. They are lovingly and expertly baked by Jesse Lomax Floyd in Brooklyn using simple, pure ingredients. These buttery shortbreads are scented with vanilla, cinnamon and orange and studded with bright green pistachios. Fantastic.     Madagascar Dark Chocolate Bar - Anna Davies and Robbie Stout love each other. But they might both just love chocolate more – they trace their Ritual Chocolate creations from bean to bar, focusing on coaxing the most complex, specific flavor possible from the beans, which they source directly from the farmers. The Somia Plantation in the lower Sambirano Valley of Northern Madagascar has unique growing conditions and post-harvest practices that are known for producing rich, citrus-y, nutty cacao. That's the organic cacao you'll find in this bar, along with just some organic cane sugar – a beautifully simple showcase of the distinctive terroir of Madagascan cacao beans. Robbie and Anna say the nuttiness is reminiscent of roasted hazelnuts, and it's balanced by bright fruity notes on top. Tip of the Tongue This bar is bold, fruity and flirty, so pair it with anything mild and creamy to make the sparks really fly. A smear of peanut butter is a great idea – don't question it, run with it. Or, shave some of this bar over whipped cream or ice cream for a creamy complement. Ingredients Cocoa and cane sugar.     Peru 66% Dark Chocolate Bar - Chocolate-makers Jael and Dan are all about local, organic and sustainable (they even have a solar-powered cacao roaster!), but quality is their ultimate standard and these bars are winning. They make them in Asheville, North Carolina, near the French Broad River. The organic, fair trade cacao in this bar was grown in a "very special oasis of cacao trees" in the coastal dessert near the Palo Blanco community in Chulucanas, Peru. It's bright and clean, with hints of fig and a balanced sweetness brought on by nothing but pure cacao and sugar. Tip of the Tongue The fig notes in the bar perfectly complement the sweet, low tang of balsamic vinegar, so it would be delicious accompanying or following any dish that uses balsamic vinegar, whether that's a salad or a steak.     Raspberry & Hibiscus Marshmallow Cookie - Laura Curtis calls her marshmallow sandwich cookies "malvis," from m alvavisco , the Spanish word for marshmallow. She was inspired by toasty s'mores and summer campfires on Lake Michigan, but she picked up her technical skills at the Culinary Institute of America, and then working as a research and development chef for a large supermarket chain. tip of the tongue These confections are delicious straight, but magical things happen when you microwave them for 5 seconds or put them in a toaster oven for 30 seconds.     Widow Jane 7 Year Straight Bourbon Whiskey - Cacao Prieto's chocolate was one our very first products when we first launched in early 2012. Since then, we've waited eagerly and patiently for the chance to also sell their outstanding bourbon! Caramel upfront, a beautiful vanilla finish and just enough sweetness? We're so glad it's here! The Cacao Prieto family sources this 7-year old whiskey from Kentucky, then adds water from the old Widow Jane limestone quarry in Rosendale, New York to bring it to proof (45.5% alcohol). One of the secrets behind making great whiskey is that it requires water with remarkable flavor; in fact, most whiskeys are more than half water. Mineral-rich limestone water is particularly prized for Bourbon production, especially in bourbon-rich, mineral-rich Kentucky. The Widow Jane quarry has even more limstone-y water – so it's even better. Daniel Preston and his Cacao Prieto family had a history of growing cacao and making rum in the Dominican Republic, on their farm called "Coralina."
