From trying to grow cacao beans in their own apartment to roasting fresh beans in their little oven, it was only a matter of time until these two former tech-industry leaders would abandon computers for cacao. Now, in their small bean-to-bar workshop in the Mission area of San Francisco, they roast, crack, sort, winnow, grind, conch and temper small batches of single-origin beans and then mold and package each bar by hand. Maya Mountain Cacao ferments and dries beans purchased from over 200 small farmers in Southern Belize. This bar greets you with graceful hints of green grape, then blooms into a honeyed pineapple sweetness. It ends on a high note with a tangy kick. With all this flavor, it's crazy to think just cocoa beans and cane sugar went into it. Tip of the Tongue This bar would make killer gourmet s'mores: Top one graham cracker with squares of the bar and a Three Tarts Raspberry Marshmallow . Basically, it's like having a top-notch bartender at a super-fancy cocktail bar (the kind that barrel ages its own cocktails), hanging out in your living room. Why the reference to the 36th vote? High West wanted to celebrate Utah's role as the deciding vote in the repeal of the 18 th Amendment (and the end of Prohibition). We'll drink to that. tip of the tongue As a general rule, cocktails made with only alcoholic ingredients are stirred and never shaken.     Sesame and Goji Berry Stone-Ground Chocolate - Ah, Shangri-La: a heaven on earth. A mystical valley of utopian happiness. Exotic and lusted after. A chocolate bar with Shangri-La as its namesake has a lot to live up to, but in this case, it's deserved. With not just one but two supposed superfoods, this bar is automatically more divine than your typical chocolate. The toasted sesame seeds lend an extra richness to the chocolate, bringing a toasty nuttiness recalling the decadence of Halvah, while Goji berries bring a tropical zing and a satisfying chew. ChocoVivo makes this bar with pesticide-free beans sourced from a single plantation in Tebasco, Mexico that are then fermented for two or three days, sun-dried, lightly roasted and stone-ground with no additional cocoa butter or additives.     Sugar Wash Moonshine - This "moonshine" is technically a white rum, so it's sweet and clean with a delicious hint of vanilla. Sugar Wash deserves the more storied name, though, because it's made on Harvest Homestead Farm in New York, where federal agents once discovered a one-of-a-kind, illegal, underground distillery run by legendary mobster Dutch Schultz. Sugar Wash is inspired by Dutch's moonshine made on the farm during Prohibition. Today, they (legally) distill pure Demerara sugar in traditional pot stills. tip of the tongue Try it in a Moonshine Mule, recipe courtesy of the distiller: Combine 2 oz Sugar Wash, 3/4 oz freshly squeezed lemon juice, 1/2 oz simple syrup, 3 dashes of Angostura bitters, 1 tsp of chopped fresh ginger and 4-5 mint leaves in a cocktail shaker with lots of ice. Shake until very cold and strain into a highball glass filled with fresh ice. Top with club soda and garnish with a mint leaf. ingredients Distilled from 100% Demerara sugar; 40% alcohol by volume; comes in a 750ml bottle.
