This bar is made with pesticide-free beans sourced from a single plantation in Tebasco, Mexico. They're fermented for two or three days, sun-dried, lightly roasted and stone-ground with no additional cocoa butter or additives. The bars are cooled in sheet pans and cut by hand, so you'll find several slabs in each package, with no two exactly alike. American Prairie Reserve is a caramel-y, peppery blend of 6-year-old and 10-year-old bourbons, and is quite a patriotic tribute to the Old West. High West crafted this whiskey to support the American Prairie Reserve, a public land preservation project in Montana. It's being restored to the natural landscape that Lewis and Clark would have seen more than 200 years ago, "with t hundering herds of bison, racing bands of pronghorn antelope and prairie dog towns dotting the horizon." The distillers donate 10% of the profit from this whiskey to the reserve, which, when complete, will be roughly the size of Connecticut! tip of the tongue The greater sage grouse shown on this bottle's label has rapidly disappeared, now a candidate for endangered species protection. But these beautiful birds still thrive on the American Prairie Reserve.

    Apple Mint Vermouth - Don't expect a prim and proper drink – this is vermouth gone wild! Dry and sippable, the cool, minty finish is totally refreshing (the apple refers to the type of wild mint, by the way, so no fruit here!). Maker Bianca Miraglia starts with Long Island wines from Red Hook Winery, then infuses them with herbs, mostly foraged by her or grown in her mother's garden. Her vermouth gets its bitterness from mugwort, a relative of wormwood, the traditional ingredient for making vermouth, well, bitter. Once the wine is infused, Bianca strains the herbs, rather than filtering (hence the cloudiness), then adds brandy (also made from Long Island grapes) to fortify the wine to 18% alcohol. Bianca makes her vermouth in tiny batches, so it's not always available. Buy a bottle (or two!) while you can. tip of the tongue Bianca recommends finishing a bottle within three or four weeks for peak freshness. We like to serve it chilled with a lemon twist before dinner.

Made from Gewürztraminer grape seeds, skins, pulp and stems (everything that's left over after the wine has been made), this crystal-clear spirit is smooth and fragrant with some of the distinctive tropical and spice notes that make Gewürztraminer wine so delicious. And there's no residual sugar, which makes this a great bracing spirit to sip after a big dinner. tip of the tongue Try splashing a little Grappa into your after-dinner coffee for a great twist on an old tradition. did you know? When liquor is distilled, the alcohol comes out of the still in phases, which are traditionally referred to as the heads, the hearts and the tails. Distillers typically keep the hearts to age or bottle, and rework or discard the heads and the tails. Georgetown Trading has brought back the fabled brand, and they did it justice, collecting and sampling bottles from throughout the Pepper history, from pre-, mid- and post-Prohibition production. They even acquired a "top secret" letter from Mr. Pepper himself, detailing his family recipe.
