Must-Make Weekend Treat: Cereal-Topped Donuts
This year, we're turning Valentine's Day into something far more fun and not limited to romantic love: Palentine's Day! In the spirit of partying with all your pals (just like we did in grade school!) we've put together a plan for a 90s-themed bash that your guys, gals, family, and pets will all love. Read on to learn how to make our Palentine's Day party's dessert recipe: cereal-topped donuts!
When we first saw cereal-topped donuts at a donut shop last fall, we weren't sure what to expect. It sounded a little...well, overwhelming. But after that first bite, we knew cereal and donuts was a winning brunch combination. It was only a matter of time before we decided to re-create them at home. We made ours entirely from scratch, but if you're short on time or not much of a cook, you could buy plain cake donuts from your favorite bakery and just make the topping yourself.
For the donuts (inspired by Wilton):
2 cups cake flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp ground nutmeg
1 tsp salt
2 Tbsp butter, melted
2 eggs lightly beaten
3/4 cup buttermilk
dash vanilla extract
For the vanilla glaze:
1/2 cup powdered sugar
3 tsp milk
For the cereal topping:
3 cups of your favorite cereal (we chose Fruity Pebbles, but we have it on good authority that Cap'n Crunch and Reese's Puffs are also delicious)
Preheat oven to 425 degrees.
Whisk together flour, sugar, baking powder, nutmeg, and salt. Mix together buttermilk, vanilla, butter, and eggs. Add to the dry ingredients and mix until just combined. Pour mixture into a large zip-top bag and cut the tip off; pipe the batter into a greased donut pan. Bake for 8 minutes and then take out of pan and set on a wire rack to cool.
Combine ingredients for glaze and pour over the donuts. Then sprinkle cereal on top.
